Hardeep Singh Matharu loves cooking. Though he is Punjabi, he harbours an interest and enjoys tribal cooking. He has friends in the Naga hills and among the Mising tribals who are riverine settlers on the banks of the Brahmaputra. Both places are close to his base in Jorhat, Assam. He enjoys serving up fish preparations with Naga ‘dhekia’ ferns, pork with bamboo shoot, duck with ash gourd, local chicken with bhoot or naga chillies — all cooked in freshly carved bamboo hollows.
